how do you want to be remembered

After pondering aging for a few years now, since entering what I refer to as my “last trimester” of life, I have realized you have some important choices to make. Like who do you want to be remembered as. It seems old people either turn cantankerous or they resort back to their childlike self and live simply by the golden rule. After finishing up a beautiful Lent & Holy Week and learning the St Ephraim prayer, I believe I will choose to not judge my brother or meddle in their business but to instead see my own sins and give love to all. AND I absolutely choose the simple, childlike way of life.

Shrim and Tofu Fried Rice from Spices Food Truck in Russellville, Ar.

Shrimp Fried Rice (with added Tofu)

I’ve recently gotten the pleasure of trying two meal options at the Spice Garuda Food Truck near the Walmart Neighborhood Market in Russellville, AR.

You might have seen the review I shared on the Mei Tek-Tek Noodles so I definitely wanted to come back and share that I tried the Shrimp Fried Rice.

Their food has always been so hot and fresh for me so this fried rice was not exception.



It is a nice-sized portion of flavorful fried rice with some carrot shapes and small pieces of heart-shaped egg. Just like their other dishes, you can order it with your choice of protein: beef, chicken, tofu, or shrimp.

I was extra hungry so wanted to up my protein with this one, so I ordered the Shrimp Fried Rice and asked to add tofu as well.

As I would have expected, and was fine with, the addition of the tofu does cost some extra, but it was worth it to me for the added protein during a time when I’m not able to have beef or chicken.

The combo of the shrimp and tofu was perfect. It did seem that there were more tofu pieces than shrimp pieces, so I wish there was a little more shrimp, but as far as flavor and portion size of rice I got plenty of food and would order it again.

If you don’t eat red meat or chicken, then this food truck might be a great option for you and your family since you still have a couple of protein options here with the shrimp or tofu. It’s a great option for our family during Lent.
